Broiled Tilapia with Garlic


This recipe is great with just about any fish, but in my house we like a lot of Tilapia. This recipe is pretty low in fat because it's not fried, but you still get that crispy fried texture on the crust because of the broiling.  I inhaled my portion before my husband could even ask if I thought it tasted good.

Broiled Tilapia with Garlic

Ingredients
6 Tilapia Fillets
2 Cloves Garlic, crushed
3 teaspoons Extra Virgin Olive Oil
1 teaspoon Oregano
1 teaspoon Parsley
Salt and Pepper
1 Lemon
Spinach (optional)

Directions
Wash fish and pat dry. Line broiler pan with tin foil.
Place fish on the tin foil and season with salt, pepper, oregano, and parsley.
Drizzle with olive oil and top with crushed garlic.
Set broiler to low and place fish about 6 inches from coil, 7-8 inches if you use gas.
Cook until fish is cooked through, about 6-7 minutes (be careful not to burn garlic).
Serve on a bed of spinach with freshly squeezed lemon juice.
